As Joey said just get a friend ordained and you can say exactly what you want at your ceremony and have it be legal. And, it will save you several hundred dollars as well. Universal Life Church

I'm not married yet but my gf and I are atheists. We are planning to have our wedding on a lavender field, and have a long table that stretches across the landscape where family and friends will have lunch together italian style...even though we're chinese.

There are bunches of wedding blogs out there. Lots of ideas for weddings on all kinds of budgets. Some of them will help you set up a timetable and give you a checklist of things to sort out, some even manage your RSVP's and table assingments (if you're having those). Most of them are free too.

You could always get a friend ordained through the Universal Life Church and make them do it.
That way you could make sure nothing popped up that you didn't want.
That's pretty much the way my best friend's wedding was. They had complete control over every aspect of the vows and what I said to them.

Yes, try to find an atheist minister, but also there are Unitarian Universalist ministers who are very open to whatever type ceremony you want. You can also look up a minister in the phone book under "weddings" as many advertise. Let them know what you're looking for. You may be surprised how open and accommodating they are when they are making a buck on it!
I'm an ordained minister, (from before I became atheist) so I can marry people in my own state. If you're having trouble, let me know and I'll apply for a license to marry in YOUR state and perform your wedding for you, in grand atheist style!

get a judge, they do it cheap and quick but nice, spend the money on the reception. My wedding took about 15 minutes with immediate family while we were setting up for the reception in a rented out dining hall. The judge came, we decorated a little area outside, family gathered around, we forgot we needed witnesses, so my wife and grabbed my brother and her sister to stand with us. No mention of gods, just the joining of two people and two families. The judge left, we got changed and finished setting up the reception. Very nice and painless. Looking back the only thing I would change is putting someone else in charge of the reception. It was more like a party and I acted as host. Spent too much time getting more drinks, organizing the food, etc.
