To try to encompass all of Robert Heinlein's philosophy by recommending one book is likely impossible.  I COULD be tempted to suggest Time Enough For Love, even though it (sort of) requires that you read Methuselah's Children first (it really CAN stand on its own, though). There is a lot of RAH's philosophy in Time Enough and in many of his other books.

If you want to have a hard, strong look at his attitude on religion, I have three suggestions:

Job: A Comedy of Justice. This REALLY gets to the heart of the matter ... and it should have been his FIFTH Hugo Award winner.
Stranger In a Strange Land. All you have to do is look at the gross parody which is Fosters "Church of the New Revelation" to see what he thinks of current-day organized religion.
If this goes on... from the collection, Revolt in 2100. One of the first pieces Heinlein wrote which dealt directly with religion and its leanings toward imperialism.

These are among my faves. We can talk about this if you like or you can go your own way. In any case, I'd be interested in hearing your reaction to whatever you do get into.
