It's not Mexican food, but I did find a bitchin' Ethiopian restaurant here. I haven't been south of Princeton yet, so I'm unfamiliar with all that your particular area has to offer. I should make my way down there sometime, though; I'm in the middle of a wildflower collecting spree and need to find species outside of New Brunswick before I have to return the plant press I borrowed.
I empathize with your weather troubles. I was supposed to play kickball today but our baseball field got rained out. Plus, it's, like, 68º right now. Brr!
I once drove through I-40 to drop off a friend at OSU (or it might have been OU, don't remember). Other than that, I have no experiences of Oklahoma, other than a curious phenomenon that I've noticed but cannot yet explain to you. Instead, I must ask you, as a resident of Oklahoma: do you like Taco Bueno?
I grew up in Houston, by which I mean north of Houston in Spring. It's kind of funny that people from Spring will say they're from Houston when it takes longer to get from Spring to downtown Houston than it does to get from, say, New Brunswick to Newark. Texas certainly has a different type of geography.
As for what cool stuff to do in Jersey, from where I live New York is only an hour train ride away! And Marlton is right by Philly, so you'll have that going for you. I'm not sure about all the activities one can partake in, since I've only lived here for two months. I'm sure I'll find out, though.
