I just made this recipe for the first time. I found a recipe online and adjusted it to suit me. Delicious.

note: This bread is almost too sweet, I would reduce the brown sugar a bit.

Banana Coconut Bread


Banana Coconut Bread

ingredients:


* 1 teaspoon baking powder
* 1 1/4 cups all-purpose flour
* 1/4 teaspoon salt
* 1 stick (1/2 cup) unsalted butter (or margarine)
* 2/3 cup brown sugar (I would use a bit less)
* 1 large egg (I use egg substitute*)
* 1/2 teaspoon vanilla
* 3 very ripe bananas, mashed
* 3/4 cup unsweetened flaked coconut (plus a bit more to put on top)


directions:


1. Preheat the oven to 375°F.

2. Grease a 4 x 8 inch loaf pan with butter.

3. Mix flour, baking powder, and salt in a bowl

4. In another large bowl mix in butter, sugar, egg or egg substitute and vanilla

5. Add mashed bananas and continue mixing.

5. Add 1/2 cup of unsweetened coconut to the mixture.

6. Combine the contents of the 2 bowls together.

7. Transfer the mix to the loaf pan and cover the top with more unsweetened coconut.

8. Bake the bread for approximately an hour (at least an hour).

9. Check if the loaf is ready by inserting a toothpick. If it comes out clean, it’s ready to be taken out of the oven.

*by the way - the egg substitute I use is ENER G Egg Replacer which works great!

Reminds me a little of a recipe a friend's mum gave me once for something called Aloha Bread, which was essentially this but with orange zest and nuts i think.
My wife makes a wonderful banana bread but the coconut looks like a nice twist. Good post, Sacha.

How do your bananas taste in the US? I've never eaten a good banana in France.
The bananas in the US often come from South America, and they are usually good.
