Carl, unripe watermelon guts are usually greenish-white, and certainly tasteless. 

Pat, you must have a big refrigerator. Melons take up a lot of room. Your "alternate" breakfast sounds delicious.

Randy, I'm curious what the inside of an underdeveloped watermelon looks like.  Is it still edible?

Watermelon is good for you.  Between that and honeydew melon, I generally try to have one or the other for breakfast every day.

Except yesterday, where I pigged out and made huevos rancheros with several additions. Re-fried black beans on the tortillas. Chorizo on the frijoles. The eggs on the chorizo topped with the ranchero salsa, queso fresco and a green tomatillo and jalapeno salsa.  Had to do an extra mile on the treadmill to compensate.

First, one has to procure a watermelon. My home grown ones may never develop to maturity. They ARE very good for you.

I had the eggplant, the squash, the tomato, the onion and garlic. So what did I make? Ratatouilli, of course! Very good.

Pat, I'm SO happy you like that potato salad: I was startled, and very pleased, by the "zing" of the sour cream instead of the same-old-same-old of mustard and mayo (even though I still like that, too).

Yeah, Pat, I thought Felaine's potato salad recipe sounded awfully good.  I'll have to try it as well.

Dinner is chicken leg quarters (with attached thighs) grilled with a little hickory smoke. Corn on the cob - picked yesterday. And, I finally got off my ass and made potato salad yesterday, and let the flavors meld overnight in the fridge. 

With some minor variations, I used Felaine's recipe that she just posted here. Tried it just a few moments ago.

Felaine, that stuff is damn good!!!! High five!
