I have been cooking egg loafs lately. I am so happy with them. You can add so much! Have you ever made an eggloaf?

My photos include my regular feta cheese loaf (with my lootcrate tat lol.) I oiled a little pan and threw a few egg in the food processor with the cheese to wisk then stuck in in the toaster over for about 35 minutes. The second loaf has spring onions, mild cheddar cheese, mushrooms.

I've made something similar, that I refer to as a fritata. I posted the recipe here. I do mine in a cast iron skillet and bake it in the oven.  Comes out looking like this.

Melanie, I've never heard of egg loaf!  Thanks for posting.

You can't beat a good egg dish. Hopefully, the eggs are "farm fresh" (organic).

I have made similar things...I call them "Crustless Quiche."  Any ingredients will do....I just don't like making pie crusts any more, and I have never owned one of those shallow quiche pans.  I just spritz a Pyrex baking dish  (any shape) with cooking spray, and ver-r-r-r-y carefully pour the egg/cheese/veg mixture in.

Sometimes I add a package of store-bought lightly seasoned croutons into the mix, and let them soak for 10 or 15 minutes before pouring everything into the dish.

Bake as directed for a regular quiche....keeping an eye on the process so it doesn't burn.
